When you shop for that perfect mahi-mahi fillet, be sure to stay away from anything on the package that reads “farmed.” That’s because farm-raised fish is associated with higher levels of inflammation in the body as a result of its heavy omega-6 fatty acid content. Plus, because farm-raised fish are typically surrounded by an overcrowded space, they’re usually administered antibiotics to keep infection at bay.
Instead, you want to be picky about the fish you select, and anything that’s not raised in a crowded farm environment or given antibiotics is your best best. Thai Macadamia Mahi
Can you handle the heat of a firey fish fillet? If so, give this recipe a shot!
- 2 each 5-oz. mahi fillets
- 1 tbsp coconut oil
- salt and pepper
- 1/4 cup chopped macadamia nuts
- 1 bunch cilantro
- 3 each jalapenos
- ½ cup almond butter
- 1 tbsp apple cider vinegar
- 3/4 cup light coconut milk
- 2 tbsp red curry paste
- 1 tbsp chili garlic sauce
- 1 each stevia packets
Preheat oven to 400°. Line a baking sheet with parchment paper.
Wash and pat dry the mahi fillets. Brush olive oil on both fillets and season with salt and pepper. Place into the oven for 18-20 minutes, until fully cooked.
Meanwhile, make the thai sauce. Heat sauce on a simmer until ready to serve (can optionally add chopped macadamia nuts to the sauce).
When ready to serve spoon a few tablespoons on top of the mahi or on the side as a dipping sauce. Sprinkle fresh cilantro on top and serve.
Heat almond butter, apple cider vinegar, coconut milk, red curry paste, and chili garlic sauce in a sauce pan.
Whisk together until smooth, then add stevia to sweeten to your liking.
Heat on a simmer until ready to serve (can optionally add chopped macadamia nuts to the sauce).
